Amma's famous 'red gravy'. She makes it soooo well. Here is her recipe
Ingredients:
1 onion (3/4 cut long, 1/4 for grinding)
2 big Roma tomatoes (pureed)
2 cups veggies cut long or into chunks (peas, carrot, capsicum/bell pepper)
1 tsp khus khus , 1 inch ginger
2 tbsp broken cashews
4 tbsp curds/ yogurt
3 tsp oil , salt to taste
2 tsp chilli powder
1 tsp kasoori methi (dry)
1/2 tsp jeera
1/2 tsp coriander powder
1 tsp garam masala
water/ milk to make gravy
coriander/ cilantro leaves for garnish
Add oil in kadai, splutter jeera. Add the chopped onions, salt and saute till crisp.
Next add carrots, peas and saute till soft. Add the bell peppers next and saute well.
Sprinkle some water and cook veggies till soft. Add more salt if needed.
Make a paste with a small onion piece, khus khus, ginger, cashews and curds. Add this paste and saute till completely dry or oil separates.
Add pureed tomatoes. Add chilli powder, garam masala, coriander powder , kasoori methi and saute well till completely dry.
Top it off with water or milk to achieve the desired gravy consistency. Check for salt. Garnish with chopped coriander leaves.
Serve hot with rotis/ chappatis.

Made this for yesterday's dinner without onions (out of stock in pantry).. and it came out so creamy and fantastic!
The recipe was very similar to a kurma I make. But adding cashews, milk and kasoori methi to the gravy was new. And the results were finger licking good!! Goes to show small changes can make big differences :)
