1/4 tsp turmeric powder
2 tsp oil, oil for shallow frying
2 cups bread crumbs
4 tsp maida (all purpose flour) made to a thick paste with suffiecient water

Add oil in a kadai. Add the onions, salt and saute till transparent. Add the mixed veggies and continue to saute till soft. Sprinkle some water if required.
Add turmeric, chilli powder, chat masala and more salt if required
Add the mashed potatoes and continue to saute for a few minutes
From this mixture, roll out small balls and pat them to the shape of cutlets.
Dip each cutlet in this maida paste such that they get a uniform coating.
Now drop these cutlets in a plate filled with bread crumbs. Toss it over and make sure that it is well coated with a layer of bread crumbs

My favourite restaurant order! Hot pav bhaji after school... Mom used to make Pav Bhaji every Monday evening. Here is Amma's Pav bhaji recipe

Serves 2-3 people

Ingredients:

2 tomatoes- pureed
1 onion chopped
2 cups assorted cut veggies (beans, peas, carrots, cauliflower, potatoes)
1 capsicum (bell pepper) - very finely chopped
1 lime
1 tsp kasoori methi (optional)
coriander leaves for garnish
1 tbsp pav bhaji masala
ginger garlic paste 1 tsp (optional)
2 tbsp butter / oil
1 tsp chilli powder
salt to taste
a pinch of turmeric

Pressure cook the assorted veggies with salt and a pinch of turmeric. Mash them coarsely in a food processor or hand masher. Keep aside
Add butter in a kadai, when it melts, add chopped onions. Fry till crisp
Add ginger garlic paste and saute well (optional)
Add very finely chopped capsicum and saute till done. (You can alternatively pressure cook bell peppers with the other veggies and skip this step)
Add the pureed tomatoes.
Stir in salt, chilli powder, kasoori methi (optional), pav bhaji masala and saute for a few minutes.
Add the mashed veggies and mix well.
Add more water if necessary to bring to bhaji consistency.
Put off the heat.
Garnish with chopped raw onions, coriander leaves, butter and a little lime juice.
Serve hot with butter toasted pav buns!
Yummy!!!

Batata Vada / Indian Burger

Indian Burgers!

This is the best way to make Indian burgers (Batata Vada) at home. I got this recipe from my aunt Mythili.

Ingredients:

1 big potato
3 tbsp oil
1 green chilli finely chopped
ginger grated 1 inch
Jeera seeds 1/2 tsp
salt to taste
turmeric 1/4 tsp
Besan 1/2 cup
Oil for deep frying
2 burger buns / Pav buns
4 slices cucumber
4 slices tomato
2 tbsp butter
2 tbsp garlic chutney / onion chutney

Make a batter with besan, salt and water (consistency like Bajji batter). Keep aside.
Boil potato, mash it lightly. Mix salt, jeera, green chillies, ginger, turmeric and oil to make a firm dough. Take small balls and pat it into the shape of cutlets/ pattis. Dip it in the besan batter. Make sure that each flattened patti gets a good coating. Deep fry till golden brown on both sides.

Toast the buns on a grill. Slit the buns. Spread butter on one side and garlic chutney on the other piece of the bun. Assemble the patti, cucumber slices, tomato slices just like a burger and serve hot!

This is an awesome recipe from my bro-in-law Rajesh. All of us love this dish.

Ingredients:

To make the patti:
3 medium potatoes
1 onion
1/2 cup chopped coriander leaves
oil 5 tbsp
chilli powder 1 1/2 tsp
salt
Turmeric 1/4 tsp
Chat masala 1/2 tsp
Bread Crumbs 3/4 cup
Oil for frying

For Ragada:
1 cup dry white peas
oil -3 tsp
jeera 1/2 tsp
1 onion chopped
3 Roma Tomatoes (Bengaluru thakkali) chopped
salt
Chilli powder 1 tsp
Garam masala 1/2 tsp

For Garnish:
1/2 cup chopped onion
1/2 cup Sev / Ompudi
5 tsp tamarind chutney

Pattis: Boil potatoes. Peel them and mash them lightly. In a bowl mix all the ingredients for the patti. Roll out lemon sized balls and flatten them on plastic sheets. Deep fry till evenly golden brown. Keep aside.

Ragada: Add oil in a kadai, splutter jeera. Add chopped onions. When it gets glassy, add the tomatoes. Add chilli powder, salt, garam masala. Once the tomatoes get soft, stir in the cooked peas. Add 2 cups water and bring to a boil.

Top the pattis with ragada and garnish with sev, tamarind chutney and onions.

Tamarind Chutney:

Soak 1 lime sized ball of tamarind, 3 tbsp of powdered jaggery, 1/2 tsp salt and microwave on high for 3 minutes. Extract the juice of tamarind completely and discard the solid waste.
