Manga Pachadi / Sweet n Sour Mango Gravy

Mangai Pachadi

My grandmother is an expert in this pachadi. I still remember those summer holidays when Paati used to make Pachadi for my father..
Recently my athai and paati made manga pachadi in microwave! They say, it is simpler to make this pachadi in microwave ( else there is a possibility that the the mango pulp might stick to the pan and get charred) . Here is their super recipe!

Ingredients:
1 medium size raw mango
3/4 cup powdered jaggery/Gur
Turmeric 1/4 tsp
2 slit green chillies
Hing 3 dashes
Methi/Fenugreek powder 1/2 tsp
Salt to taste
Oil 1 tsp
1 tsp mustard seeds
1 red chilli

Peel off the skin of raw mango. Coarsely chop raw mango. Transfer to a microwave safe bowl.
Sprinkle salt, add turmeric and hing. Add the slit green chillies.
Add 1 cup water to the manga pieces and toss into microwave.
Microwave for 10-12 minutes.
Remember to check the bowl on and off..The gravy must be kept wet always. Add little more water if the pachadi is too dry.
Mix well. Add the powdered jaggery and methi powder.
Add another 1/2 cup water. Continue to microwave for another 3 minutes.
If pachadi consistency is not yet achieved (like in the pic), microwave for few more minutes till done.
Add oil in a kadai, splutter mustard seeds and a red chilli.
Transfer to the Pachadi bowl! Check for salt.

Enjoy with a wholesome South Indian meal :)

Thengai /Coconut Pachadi

Ingredients:
1/4 cup grated coconut
2 green chilies
3 sprigs coriander leaves/ curry leaves
1 inch ginger (optional)
4 cups curds/ yogurt
salt to taste

Grind all the above ingredients (except curds/yogurt) to a very fine paste with water. Mix this paste with yogurt. Blend evenly. Serve with any rice dish. Garnish with coriander/ curry leaves.

Tomato- Capsicum Pachadi / Tomato Raita

Tomato Pachadi

This is an awesome side-dish for Bisi bele bath. My sister's favourite Pachadi/ raita... Here is my mom's tomato raita recipe.

Ingredients:
2 tomatoes, chopped
1 small capsicum/ bell pepper (or 1/2 of a big one), chopped
1 green chilli slit long
1/2 tsp mustard seeds
1/2 tsp methi powder
1 tsp oil
curds/ yogurt - 2 to 3 cups
chopped coriander leaves (for garnishing)
salt to taste
hing 3 dashes

Add oil in a kadai, splutter mustard seeds. Add the green chilli, tomatoes and capsicum. Sprinkle salt, hing. Saute well till tomatoes are soft.
Stir in the methi powder and saute for another minute.
Allow it to cool.
Now add curds and mix well. add more salt if required.
Garnish with chopped coriander leaves.
Tastes great with any spicy rice dish.

Note: If you dont have methi powder, just add 1/4 tsp of methi seeds along with mustard seeds.

Cucumber pachadi/Velirikai Pachadi

Cucumber Pachadi

Ingredients

Cucumber-1 large (American)
Thick yogurt- 2 cups
Water-1/4 cup
Oil -2 tsp
Mustard seeds -11/2 tsp
Urad dal -1 tsp
Green chilly- 1 (finely chopped-optional)
Asafoetida- 1 pinch
Salt- to taste

Procedure

-Grate a cucumber. (Traditionally, cucumber is fine chopped and steamed.)
-In hot oil, add mustard, urad dal and asafoetida.
-When the mustard seeds start popping, pour the oil with seasoning into the cucumber.
Add green chilies, salt and curd. If too thick, add a little water.
(The cucumber will also give out some water once salted. So be a little careful!)
-Pachadis are a part of most south Indian feasts. It is also a great accompaniment with Venthiya Kozhambu :)
