All the podi recipes are from my granny olly. September 1 of every year, she makes all the podis for most of the family members. For the podis to stay fresh for long, use rock salt and gingely oil only. Also store the podis in airtight containers and refrigerate the excess portions. Keep them outside only as and when required.
1 cup urad dal
1/2 cup channa dal1/4 cup toor dal
3 red chillies
rock salt to taste
hing 3 dashes
2 tsp oil
Saute all the ingredients with oil till colour gets golden. Grind all the ingredients together to form a coarse powder. Use to garnish urulai (potato) / vazhakkai (raw banana) podimas.

Hey, I keep them outside always. But in summer I am not sure. Its always winter just a few months summer ..I am unsure. Should it be in refrigerator?
No dear... None of the podis need to be in the refrigerator... Keeping in the fridge just prevents the poochis and if u have them in bulk, u can store them in fridge.
By keeping in the fridge, u can store it for years.
Ofcourse, if u have added vazhakkai or urulai to it, it has too be in the fridge :)
