Wow! If u love the flavour of mint, u just cannot resist this dish. I learnt this recipe from my friend Roseline Ponmalar. I call her the queen of Pudhina rice..
Ingredients:
To make the paste:
1 handful pudhina
1 handful coriander leaves
1/2 onion (Indian size), 1/4 of American size
1 sp pottu kadalai/ odacha kadalai/ split chickpeas
2 sp coconut gratings
1/2 sp jeera
tamarind 2 inches
3 green chillies
hing -2 dashes, salt
ginger-garlic paste (optional)- 1/4 sp
oil 1-2 sp
Saute the above ingredients in oil and grind them to a fine paste. Keep aside.
1/2 cup rice
mustard seeds 1 tsp
water 1 cup
oil 3 tsp
salt
Cook rice with salt. Make sure that it is grainy. Add some oil in kadai, add the mustard seeds, add the paste. Saute till almost dry. Mix evenly with sufficient cooked rice.
It is a very simple n tasty dish... you can however add veggies if u like...If u love the flavour of mint, this is a sure hit :)
