Kothamalli Sadham/ Coriander rice

Coriander Rice


This is my grandmother's signature dish! My chinna paati shanth's recipe is also very similar. This rice is simple and tasty, also very easy to make..

Ingredients:

1/2 cup rice
1 cup water
4 sp oil
salt to taste
1 sp mustard seeds
1 sp urad dal,
1/2 sp channa dal
1/2 cup finely chopped onions
1 cup assorted veggies (carrots, beans, peas, potato)
1/2 lemon
1 small bunch coriander
2 green chillies , 1 inch ginger
1/4 onion or 1/8th of a huge American sized onion (for grinding)

To make the green paste: Grind together coriander, small piece of onion, 1 inch ginger, green chillies, salt to a smooth paste. Keep aside.

Cook rice separately with some salt and 1 sp oil, make sure that it is grainy. In a kadai, splutter mustard seeds, channa dal, urad dal. Add the chopped onions. Add the veggies. Sprinkle salt. Stir fry the veggies till crisp. Sprinkle water if necessary. Add the green paste. Saute well till dry. Add enough rice and mix evenly. Allow it to cool for a few min. Squeeze out lime juice once done and mix. Serve with cucumber raita and rice crispies/vathal/vadaam...yummm!!!

Make the green paste with equal portions of coriander leaves and mint leaves, a small piece of onion, 1 inch ginger, green chillies, salt, 3 tbsp sour curds/yogurt and 4 cashews. Follow the same recipe as above but omit adding lime.
