Palak Paneer / Spinach Paneer

Palak Paneer

We all love Palak paneer! My mother, sister and almost everyone at home make excellent palak paneer.. Here is the recipe

Ingredients:
2 bunches fresh palak
2 big roma tomatoes/ bangalore thakali (pureed)
1 onion
1 inch ginger or 1 tsp ginger garlic paste
2-3 green chillies
1 tsp garam masala
1/2 tsp coriander powder
1/4 tsp jeera powder
200 gm paneer
1 cup milk
salt to taste
3 tsp oil
oil for shallow frying

Soak paneer in hot water. When it softens, drain and cut into small cubes. Shallow fry the cubes in hot oil. Drain and keep aside.
Clean palak. Coarsely chop the palak leaves. Add a little oil in kadai and saute palak leaves till they shrink. Keep aside.
Grind together onion, ginger, green chillies to a fine paste
Add oil in a kadai, add the onion paste and saute well till dry.
Next add the pureed tomatoes and saute. Add salt, garam masala, jeera powder, coriander powder. Saute well till dry or oil separates
Now, either mash or grind the sauteed palak. Add the palak paste to the gravy and simmer.
Add milk and bring to smooth gravy consistency
Stir in the fried paneer cubes. Simmer for 2 more minutes. Check for salt.
Serve with hot rotis or chawal.
