Dum Aloo

Here is my sister Aarthi's Dum Aloo recipe

Ingredients:
1 pound baby potatoes
salt to taste
1 tsp garam masala
1 cup thick curds/ yogurt
2 onions
1/2 tsp ginger-garlic paste
1/2 tsp jeera seeds
4 Roma tomatoes (use just 3 if the tomatoes are big)
oil for shallow frying
salt to taste
1 bay leaf
chilli powder 1 tsp
turmeric 1/4 tsp
3 tbsp chopped coriander/cilantro leaves (for seasoning)

Prick baby potatoes with fork and microwave with water till soft. Peel off the skin. Wipe them and shallow fry till golden brown.
Grind onions and ginger garlic paste. Grind tomatoes separately to a puree.
Add oil in a kadai, add jeera seeds, bay leaf. When they crackle, add the onion paste and saute till dry. Add curds and saute for a couple of minutes.
Add pureed tomatoes and saute. Add garam masala, turmeric, salt, chilli powder and allow it to cook till dry or oil separates. Add the fried potatoes. Mix evenly
Add sufficient water to bring to smooth gravy, close and cook till the potatoes absorb the masala. Dilute with more water if necessary.
Garnish with coriander leaves.
Serve hot with rotis/ Chappatis

Whole garam masala (elachi, cinnamon, cloves) is optional. We just use garam masala powder...

If I add the curd, won't the curd break?

Yes it will but it also dissolves very fast with the gravy...It gives a very good taste.
