Recipe and Photo Courtesy: Radha (my co-sister)
This is my co-sister Radha's signature recipe
2 cups mixed veggies chopped (beans, peas, carrots, cauliflower)
4 tsp butter / oil
Cinnamon 1 inch
1 bay leaf
Cumin 1/2 tsp
ginger garlic paste 1/2 tsp
3 green chillies
1/2 tsp garam masala
salt to taste
turmeric 1/4 tsp
3 tsp chopped coriander for garnishing
Pre-cook veggies with a dash of salt in water (in a microwave).
Cut onions and tomatoes into big pieces. Add some butter in a kadai add the green chillies and ginger garlic paste. Add onions, saute till crisp. And tomatoes. Saute till soft. Transfer to a food processor. Blend to a smooth gravy.
Add some more butter, add cinnamon, cardamom, bayleaf, cumin seeds. When cumin seeds crackle, add the blended gravy and saute well.
Add garam masala, salt, turmeric powder. Allow it to boil well till oil separates.
Add the pre-cooked veggies. Stir in a little water and bring to a smooth gravy consistency. Simmer for 2 more minutes.
Serve hot with chappatis/ rotis.
