-300g of penne pasta cooked with salt
-4 cloves fresh garlic
-2 tbsp extra virgin olive oil
-4 to 5 Tbsp Basil pesto
-3 tsp Italian seasoning (a dry blend of marjoram, thyme, rosemary, savory, sage, oregano and basil)
-Pepper 1 tsp
-1 tsp chilly flakes (Optional)
-2 tsp Vinegar
-Salt (to taste)
-3 to 4 Tbsp Parmesan cheese
Method of Preparation
-In a pan, drizzle olive oil and sauté garlic and zucchini for about 5 min.
-After the zucchini softens and there is a wonderful aroma of garlic, add the pesto along with pepper, vinegar and Italian seasoning. Cook for about 5 min stirring at regular intervals.
-To this mixture add the cooked pasta and give it a quick mix.
-Check for salt and cook for about 3 min.
-Garnish with Parmesan cheese, chilly flakes,fried zucchini shavings and a parsley.
