Aloo Tindora

I was inspired to make Aloo tindora subzi when my mil, premama gave me this idea of mixing tindora and aloo to make a subzi for chappati. My husband loves this subzi. It tastes good even with rasam rice :) Here is how we make it

Ingredients:

2 cups potato (cut long)
2 cups tindora (kovakka) cut long
1 cup chopped onions cut long
1 tsp curry powder- can be substituted with garam masala
1/2 tsp coriander (dhaniya) powder
1/4 tsp jeera (cumin) powder
1/4 tsp amchur (dry mango powder)
salt to taste
chilli powder 1 tsp
turmeric 1/4 tsp
oil 3 tsp
1/4 tsp jeera seeds
3 tsp coriander leaves finely chopped

Add oil in a kadai. Add jeera seeds. When they crack, add onions and roast till golden brown. Add potato and tindora. Continue to roast. Add enough salt, chilli powder, turmeric, curry powder, amchur, jeera powder and dhaniya powder. Mix well. Saute for 5 min. Then, sprinkle some water and cook closed till soft and completely cooked. Garnish with coriander leaves. Check for salt. ... You will never hate tindora again :)
