Bisi Bela Bath



I am a big BBB fan. I grew up in Bangalore and I love all the traditional Karnataka dishes. Most people have this impression that Karnataka dishes are sweet. Somehow, I love their food and feel that it is nice to make some of our dishes a little different. They come up with such fantastic recipes. They are the pioneers of some very popular South Indian dishes all over the world. I sincerely prefer Karnataka/ Udupi style vadas, ildis, dosas, chow- chow bath, sambhar, chutney etc.. They are so unique and full of flavour. After eating out so much in Bangalore, I just cannot appreciate vadas or dosas in any other state. Have you tried the BBB at MTR (Mavelli Tiffin Room)?? If you haven't, you are missing something in life!
My mom makes awesome BBB. I learnt this recipe from her... I make BBB atleast once in every 2 weeks. Make sure that you make potato curry and tomato raita with it! Here is the recipe from scratch. Traditional BBB is made without veggies but these days, everyone makes it with veggies. I just prefer to add tomato and peas.

Ingredients:

To make the BBB powder:
3 tsp coriander seeds (dhaniya)
2 tsp channa dal
1 tsp urad dal
3 black peppercorns (about 1/8 sp),
5-6 jeera seeds (about 1/8 sp)
4 dried red chillies
1 sp oil
Roast the ingredients in oil and grind to a fine powder.

To make the paste:

5- 6 tsp grated coconut
3 tsp Khus Khus
2 cloves
1 inch cinnamon
2 sp ghee
Roast the above ingredients in ghee and grind to a very smooth paste with water.

1/2 cup rice
1/4 cup toor dal
1 tsp channa dal
salt, hing -4 dashes
turmeric 1/4 sp
1 lemon sized ball of tamarind (extracted)
1 tsp mustard seeds,
1 tomato chopped
1 cup veggies (or just 1/4 cup peas)
1/2 tsp powdered jaggery (gur)
2 sp ghee, 1 tsp cashews
1 handful chopped coriander leaves

Pressure sook rice and dals together with rice dal : water ratio of 1:3 and 1 sp ghee. Slightly mash the cooked rice mixture. In a kadai, add oil, add tomatoes, peas, cook well. Add the tamrind extract, add salt, hing, turmeric. Let it start boiling. At this stage add the dry powder and paste. Let it boil till it thickens. The powder and paste might seem to be a little too much, but it is ok. It thickens very soon. More the masala, better the flavour. You should be able to smell BBB by now... Add the rice mixture and mix evenly. Add more water if required. Add powdered jaggery. Check salt. Fry cashews in some ghee and garnish. Dress with chopped coriander and fried onions(optional).

Never presure cook anything. I have met the chef in MTR...they dont pressure cook. Mixt it all and keep stirring with water&ghee as and when needed till it all cooks.

Anonymous: I understand that cooking in a pot gives better flavor but it takes hours to make the dish. Also in industrial size cookpots the cooking is more intensive and well done-the grains and pulses cook well.
This itself takes me about 1/2hr, thtz the reason i pressure cook.
