Baked Pasta

This is my friend Priya's fantastic baked pasta recipe. It tastes great!

Ingredients:

Olive Oil -2 Tbsp
Garlic cloves (minced) - 2
Chopped Assorted Vegetables (Peas, carrot, zucchini, mushrooms, bell peppers) – 11/2 cups
Pasta Sauce – 350 ml (I used Four Cheese Pasta Sauce in this recipe. However any type can be used)
Sun dried Tomato pesto -3 Tbsp
Italian seasoning – 2 tsp + 1tsp (a dry blend of marjoram, thyme, rosemary, savory, sage, oregano and basil)
Penne Pasta- 300g (cooked until tender)
Salt (to taste)
Pepper – 2 tsp
Parmesan cheese -3 Tbsp
Mozzarella cheese – about 2 cups



Cooking Directions


-In a hot pan add oil.
-Once it heats up, add garlic and let it infuse its flavor in the oil.
-Then add the veggies and sauté for 3-4 min or until vegetables are cooked but crunchy.
-Add Pasta sauce, salt, pepper and bring mixture to a boil for 5 min. Then add Pesto and Italian seasoning.
-Add cooked pasta and toss them all together. Garnish with Parmesan cheese.
-Lay the pasta in an oven safe dish. Sprinkle mozzarella cheese on top. Garnish with Italian seasoning (a dry blend of marjoram, thyme, rosemary, savory, sage, oregano and basil)
-Preheat the oven at 300 degrees. Pop the pasta in and bake for about 15 min (or till the cheese starts browning)
-Serve Italian Baked Pasta hot from the oven!
