What can be more satisfying than a simple meal with greens, lentils and rice! Here is the recipe to make any kind of keerai (greens) kootu.
1 bunch fresh greens / frozen (10-12 oz)
1/2 cup moong dal
Turmeric 1/4 tsp
Salt to taste
Jeera (cumin seeds) -1/2 tsp
Red dried chillies-3-4
Shredded coconut 3 tsp
Hing - 3 dashes
1 tsp mustard
1/2 tsp urad dal
1 tsp oil
Rinse well and chop the greens finely.
In a pan, bring water to a boil, add some salt and add the greens
Allow it to cook till the greens get tender and well cooked
Meanwhile, pressure cook moong dal with turmeric and hing
Grind jeera, coconut and red chillies to a fine paste in a mixie.
Add the cooked dal to the greens in the pan.
Add the jeera paste next. Check for salt.
Allow it to boil for 1 more minute.
Garnish with fried mustard seeds and urad dal
Never pressure cook greens. Always cook in an open pan only- Thnx Mom...
