Zucchini Poricha Kootu

Zucchini Kootu

This is a fantastic recipe from my cousin Rathi, who is an innovative cook... This recipe serves 2-3 persons

Ingredients:
2 Zucchinis washed and diced into small pieces.
50ml refined oil
100 gms Moong dhal( pressure cooked for 3 sounds)
100 gms shredded coconut
100ml tamarind syrup ( boil and filtered tamarind water)
Few cumin seeds (1/4 tsp)
1 green chilly
A small piece of ginger ( depends on how strong you like it )
Few mustard seeds (1 tsp)
Urad dhal (1/2 tsp)
1 teaspoon sambar powder.
1 teaspoon turmeric powder
1 teaspoon chilli powder
Hing ( Asafoedita)
Pepper to taste (1/2 tsp)
Salt to taste
Curry leaves to Garnish

Paste Preparation. (Araithu vidal)

Grind cumin seeds, pepper, ginger, coconut and green chilies into a fine paste.

Procedure
Add oil to a pan and splutter mustard seeds and urad dhal
Add diced zuchinni and fry well till soft.
Add required salt turmeric chilli powder and hing when half fried.
When finely fried till soft add tamarind syrup .Let to boil.
Add 1 spoon sambar powder
Add the pre grinded paste and let it boil well.
Finally add cooked Moong dhal add let it boil for 2-3 mins .
Decorate with curry leaves- when on heat
Serve with Rice or Chappathi.

Looks great and I havent tried anything with Zucchini like this... Kootu has come out really well... looks yummy too...

This is new to me actually though familiar of kootu very much..Adding ginger sounds interesting...Will try this sometime..

My mung dal wasn't cooked after 3 whistles...anyone else have that problem?

May be you add hot water instead of cold to the dal and pressure cooker it..
