Battoora

Ingredients

Pre sifted all purpose flour/ Maida-3cups
Sugar -2 tsp
Salt to taste
Ajwain /Carom seeds- 2tsp (optional)
Curd- ¾ cup
Ghee/butter- ¼ cup
Coarse sooji- 2 tbsp
Fresh Yeast 11/2 tsp dissolved in warm water for 10 min/ Baking soda 1tsp
Warm Water/milk to knead dough

Procedure:

-Knead the ingredients into a soft dough ball. Smear a few drops of oil and cover with a moist cloth/paper napkin.
-Let it sit for 4 hrs. The dough will rise.
-Divide dough into 10 equal portions.
-Roll into elliptical shape. Dust with atta/wheat flour to prevent sticking while you roll out the dough.(Maida is highly elastic. Hence, while you roll it out, it will shrink a little)
-In a kadai/wok, heat oil. Once hot, reduce the heat to medium and slowly lay the rolled out dough in the hot oil. Once it starts browning and puffing, flip over and fry the other side.
-Take out from oil and place in a colander and dab out the excess oil using a paper napkin.
-Serve hot with Chole.
