Elai vadam / Yelai Vadam/Ilai Vadam

Back again after a long break :) :)

This is my Kamala paati's vadam recipe. I love them and prefer eating them when just steamed. It is very hard for me to wait till they dry up and then eat deep fried vadams!

1 cup raw rice
1 tsp khus khus / jeera
3-4 green chillies (optional)
salt to taste
hing 4 dashes (optional)

Soak raw rice for 4-5 hours. Drain and grind to a smooth paste. Add salt and allow to ferment for 2 days. Once it is fermented, mix with a little water and bring to a thin dropping consistency, something like a aapam batter. Pour and spread on the steam plate. Steam it in vadam plates for 2 minutes each. Once steamed, it will separate from the plate. Pull them out. Eat them fresh or just sun dry them for a day. They dry up fast. Dry again on the other side. Store the dried vadams in air tight containers. Deep fry when you want!

Thanks to my paati, she taught me to set up my own vadam steamer! Take a kadai add water for about 3-4 inches in the bottom. Keep a plate with holes ( you can even use the pressure cooker base plate which has tiny holes) on top of the water. This is your vadam plate. Use a cover plate to cover the kadai.

Please tell me how to steam it. I did not fully get the menthod.Should one put vadam over the plate with hole or is it something diferent ?

If u have a vadam steamer, just use it directly. If you dont have one, take a big kadai. Fill 1/4 of the kadai with water. Place the cooker (base) plate in the kadai, such that it just about fits the kadai dia at some point. This level should be above the water level. If water level is at 1/4, then the plate level may be at 1/2 or 3/4 of the kadai height. So, when the water boils, the steam hits the plate. You are supposed to pour the vadam batter on this plate (which has holes). While steaming each vadam, close with a kadai cover so that the steam does not escape...
If you think that this is a big mess, just buy the vadam steamer set (if in India)

First get the water in the kadai steaming.
Next spread the vadam batter on the plate (with holes)
Close with the kadai cover.
Allow it to steam for a minute. It will be done in a few seconds actually..
With the help of a knife, just tear the edges slightly, it will come off.
Then go ahead with the next one.
Remember to have sufficient wwater to provide the steam... Hope this helps

Fill the bottom with water. Keep the holes plate first. On top of that keep the regular plate and make the elai vadam on the plate (without holes)..sorry for the confusion

First time in your space..we prepare something called kumpilappam the same way..it is a sweet dish preparing with raw rice, jack fruit and jaggery and my amma use Idali steamer or idali vessel for cooking that..Why cant we use and idali vessel for this too just a thought..
