Mix Veg Curry

Ingredients:
1 tbsp dhaniya (coriander seeds)
1 tbsp jeera
salt to taste
chilli powder 1 tsp
1 tsp garam masala
2 roma tomatoes
2 cups assorted veggie chopped (beans, carrot, beans, potato, cauliflower)
1 full onion chopped (cut long)
amchur 1/4 tsp
oil- 3 tsp
coriander leaves for garnishing
Grind jeera and dhaniya to a coarse powder. Keep aside. Add oil in a kadai, add onions. Saute well. When glassy, add the powder and continue to saute till the raw smell goes. Add the assorted veggies, salt, chilli powder, garam masala amchur. Add some water and cook till veggies are almost cooked. Add chopped tomatoes at the end. Close and simmer till well blended and well cooked. Garnish with chopped coriander leaves. Serve with hot rotis.
Instead of mixing all the veggies, you just just make it with cabbage and call it Bandh gobi curry :)
