This is my mother and chithipapa's Aloo parata recipe. We all love it!
Ingredients:
For the filling:
2 potatoes (boiled and mashed)
1 onion (chopped very finely)
3 tbsp chopped coriander
1 tsp kasoori methi
1/2 tsp garam masala
1/2 tsp cumin seeds
salt to taste
3 green chillies chopped
1/2 tsp amchur or 1/2 lime
Mix all the above ingredients and keep aside.
For the dough:
3 cups chappati/ aata flour
3 tsp oil/ ghee
a dash of salt
water for kneading
Mix all ingredients dry first. Add water and knead to a firm dough. Let it rest for atleast half an hour.
Assembling the parata:
Take out two small balls of dough. Flatten them out with the help of a rolling pin to the size of puris first. Add the filling on top of 1 part and close with the other part.
Press the edges with wet hands and seal well. Slightly flatten with hands, then roll out to the size of chappathi. Don't apply too much pressure while rolling.
The filling should not come out through the edges. Use a lot of flour for dusting to prevent sticking while rolling.
Transfer to a hot griddle. Let it first cook on one side. Flip and add oil after 2 minutes. Flip again and add a little more oil till well cooked.
Serve with raita, pickle and coriander chutney.
