Karuvepalai Podi/ Curry leaf powder

Karuvepalai Podi

The healthiest of all podis! If you like the taste of curry leaves, you are sure to enjoy this with steaming rice and a drop of ghee! Yet another recipe from my grandma olly.

Wash curry leaves and dry them completely. Saute the dried leaves in a dry pan. Grind to a fine powder and keep aside.

Next take,

1 cup curry leaves
4 tbsp urad dal
1 tbsp toor dal
1 tsp pepper corns
1 tsp jeera
2 dried red chillies

Roast the above ingredients with 1 tsp oil/ ghee till golden. Grind to a coarse powder with enough salt and 4 dashes of hing. Mix the two poders to an even mixture. Serve with hot rice and a drop of ghee.


Idly dosai podi / Molaga podi / Chutney podi

Idly Dosai Podi

Another podi recipe from my grandma... You can alter it to make Ellu/Sesame molagai podi, Karuvepali/Curry leaf molagai podi.

Ingredients:

1/2 cup urad dal
1/2 cup channa dal
2 1/2 cup red dried chillies (if you don't like it too hot, just use 2 cups)
4 tsp oil
salt to taste
hing 4 dashes

Saute all the above ingredients with oil till golden brown. Grind to a coarse powder. Alternatively, slat can be added after grinding the powder.

To make ellu (with til/ sesame) molagai podi, add 1/4 cup til to the above ingredients and follow sme procedure.

For karuvepalai molagai podi, add 8-10 sprigs curry leaves to the above ingredients and grind.
Chutney podi is the same podi with lesser amount of red chillies (vary it according to your taste).










Rasam podi / Rasam powder / Sathimithu podi

Rasam Podi

This is my grandmother's own recipe of Rasam podi. I guarantee, you are sure to love the taste of rasam made with this powder!

Ingredients:


5 cup dhaniya (coriander seeds)
2 cups dried chillies red
3 tbsp channa dal
3 tbsp toor dal
2 tbsp pepper corns
4 tbsp jeera
turmeric 1/4 tsp

Saute all the above ingredients till the aroma starts to unlock and the colour just changes. Grind to a coarse powder. (Rasam podi is coarse while sambhar podi is very fine). Store in airtight container.

Kozhambu podi/ Sambhar podi/Sambar Powder

This is my grandmother's own recipe of Kozhambu podi. The aroma is sure to make you go crazy over sambhar/ vathakozhambu/ masiyal

Ingredients:

3 cups dhaniya
2 cups red dried chillies
1 tsp methi seeds
1/3 cup channa dal
1/2 cup toor dal
1 tbsp urad dal
3 tbsp peppercorns
3 tbsp jeera
1 tsp mustard
1 tsp turmeric

Roast dry in a kadai for a few min. Just when the aroma of the ingredients unlock, grind to a fine dry powder and store in air tight containers. If you make podi in bulk, store them in fridge. Refill containers as and when required.

Puliyodharai podi

All the podi recipes are from my granny olly. September 1 of every year, she makes all the podis for most of the family members. For the podis to stay fresh for long, use rock salt and gingely oil only. Also store the podis in airtight containers and refrigerate the excess portions. Keep them outside only as and when required.

Ingredients:

1 cup daniya seeds (coriander seeds)
1/3 cup channa dal
1/5 cup urad dal
1/2 tsp til (white sesame)
1/8 tsp methi seeds
1 tsp toor dal
1 tsp oil
4 dried red chillies
salt
hing 4 dashes
1/4 tsp turmeric

Roast all the above ingredients with oil. Add dhaniya at the end. When the colour gets golden, take it out and allow to cool. Dry to a coarse powder. Mix with pulikachal (refer puliyodharai recipe for full details) and use for making puliyodharai.

South Indian Dhaniya podi / Karamathu podi / Curry powder (South Indian style)

For the podis to stay fresh for long, use rock salt and gingely oil only. Also store the podis in airtight containers and refrigerate the excess portions. Keep them outside only as and when required.

Ingredients:

1 cup daniya seeds (coriander seeds)

1/5 cup urad dal
1 tsp toor dal
1 tsp oil
4 dried red chillies
salt

1/4 tsp turmeric

Use for garnishing ladies finger (okra) curry, brinjal (eggplant) curry. It can also be used for garnishing sundals (legumes). It can be used for making stuffed brinjal kozhambu (yennai kathrikai kozhambu).
In most homes, it is referred as karamathu podi.

vazhakai podi/ urulai podimas podi

Ingredients:

1 cup urad dal
1/2 cup channa dal
1/4 cup toor dal
3 red chillies
rock salt to taste
hing 3 dashes
2 tsp oil

Saute all the ingredients with oil till colour gets golden. Grind all the ingredients together to form a coarse powder. Use to garnish urulai (potato) / vazhakkai (raw banana) podimas.

Thengai Podi /Coconut Podi

For the podis to stay fresh for long, use rock salt and gingely oil only. Also store the podis in airtight containers and refrigerate the excess portions. Keep them outside only as and when required.

Ingredients:

1 cup urad dal
1/2 cup channa dal
1/4 cup toor dal
3 red chillies
rock salt to taste
hing 3 dashes
2 cups shredded coconut
2 tsp oil

Dry saute coconut gratings till the colour starts to change. Keep aside and let it cool. Saute the remaining ingredients with oil till colour gets golden. Grind all the ingredients together to form a coarse powder. Mix it together evenly with the grated coconut. Serve with hot rice and a drop of ghee.

Parupu Podi

For the podis to stay fresh for long, use rock salt and gingely oil only. Also store the podis in airtight containers and refrigerate the excess portions. Keep them outside only as and when required.

Ingredients:

1 cup toor dal
1/2 cup channa dal
1/4 cup urad dal
3 dried red chilllies
1 tsp peppercorns
hing 4 dashes

Saute all the above ingredients (dry) till they feel light and get golden in colour. Grind to a fine smooth powder in a mixie. Store in airtight container.

Serve with hot rice and a drop of gingely oil/ghee.
