Mango Thokku
Ingredients:
1 medium size raw mango
1/4 cup gingely/sesame oil
2 tsp chilli powder
1 tsp mustard seeds
1/2 tsp turmeric
hing 3 dashes, a pinch of jaggery
Fenugreek (methi) powder- 1/8 tsp
Salt to taste
Roughly peel off the skin of mango. Grate it completely.
Add oil in a kadai, splutter mustard seeds and add the grated mango.
Allow it to cook and add chilli powder, salt, turmeric, hing
Allow it to simmer till completely dry and oil separates.
Towards the end, add the methi powder and simmer for a few more minutes. You can add a pinch of jaggery/gur-gives a great flavour.
Allow it to cool completely. Transfer to an airtight ceramic/glass container.

ReplyDeletePreethi, this thokku reminds me of my Amma's. The mango you get here, thokku doesn't come well. Probably i will ask my Mom to send some thokku.

ReplyDeleteno Sweta..Since the mango is completely cooked to remove all the moisture, there is no sun drying involved here..
